Fall Apple Tea
Put 2 gallons of iced tea in clear dispenser
Add 4 oz of fresh mint leaves
Let set for several hours.
Before serving add 4 cups apple cider.
Float green apple slices in container.
2 cups flour
1 cups sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoons allspice
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 can (10 ounces) condensed tomato soup
1/2 cup butter
2 eggs
1/4 cup milk
Pinch of nutmeg
Pinch of salt
Preheat oven to 350. Grease and flour two 8-inch round cake pans. Measure dry ingredients into large bowl. Add soup and butter and beat at low speed for 2 minutes. Add eggs and milk. Beat until well blended, scraping sides of the bowl as needed. Pour into pans and bake 35-40 minutes. Let stand in pans 10 minutes then turn out onto rack to cool. Frost with cream cheese frosting.
Cream Cheese Frosting
Blend 8 ounces cream cheese (softened) with 1 tablespoon milk and teaspoon vanilla extract. Gradually add 1 pound sifted confectioners sugar. Beat until smooth. Add more milk if frosting is too thick.

Easy Cheesy Potato Soup
Perfect for fall and quick and easy to make.
Heat bowl of milk in microwave.
(whole work is best but any can be used)
Add frozen cubed hash brown potatoes.
Heat till very hot
Stir in some white country gravy mix or pepper gravy mix, until it starts to thicken
(This can be found in dry mix section of grocery., near gravies.)
Do not stir in too much, it will thicken as it gets hot.
Microwave again. If it does not thicken add a little more gravy mix.
Add in shredded cheese
Microwave until melted.
Enjoy with some hot crusty french bread!
This is one of those recipes I do not measure. Just put stuff in the microwavable bowl and heat. No seasoning is necessary because of the country gravy mix. I do add pepper sometimes.
You will love this tasty, easy to make sauce for an accompaniment to all types of meats.

Horseradish Cream Sauce

1/4 cup mayonnaise

1/2 cup prepared horseradish

2 tablespoons Dijon mustard

3/4 cup heavy cream, whipped to soft peaks

1 pinch white sugar, or to taste

salt and black pepper to taste
Stir the mayonnaise, horseradish, and Dijon mustard in a bowl until evenly combined. Fold in the whipped cream, then season to taste with sugar, salt, and pepper.

Soda bread dough is flattened into a round circle, and divided into farls meaning 4 parts. It is then cooked on a dry griddle or pan. Traditionally this was the quickest way to make soda bread for unexpected guests who drop by for a bit of fun. It's best eaten fresh with butter and jam.
Irish Soda Bread

2 cups all-purpose flour

1 teaspoon baking soda

1 cup buttermilk
Directions

Preheat heavy based flat griddle or skillet on medium to low heat.

Place flour and salt in a bowl and sift in baking soda. Make a well in the center, and pour in the buttermilk.

Work quickly to mix into dough and knead very lightly on a well floured surface. Form into a flattened circle, about 1/2 inch thick and cut into quarters with a floured knife.

Sprinkle a little flour over the base of the hot pan and cook the farls for 6 to 8 minutes on each side or until golden brown.
